So, what is diglycerides d acides gras?
Diglycerides d'acides gras, also known as diacylglycerols, are a type of food ingredient commonly used in processed foods as an emulsifier. They are derived from plant or animal sources and are composed of two fatty acid molecules and one glycerol molecule. Diglycerides d'acides gras act as a stabilizer and help to prevent separation of ingredients in products such as margarine, ice cream, and baked goods. They are considered safe for consumption and are generally recognized as safe by regulatory authorities. As an ingredient, they help to improve texture, consistency, and shelf life of processed foods.
