So, what is fish scales?
Fish scales are a commonly discarded part of the fish, but they can also be used as an ingredient in cooking. These translucent, iridescent structures are composed primarily of collagen, a protein that is also found in the skin and bones of fish. When cooked, fish scales can add a subtle crunch and a delicate fish flavor to dishes. They are often used in Asian cuisines, particularly in soups, stews, and sauces. Fish scales are also a good source of calcium and can be used to make a calcium-rich broth or stock.
