So, what is jaunes d œufs?
Jaunes d'œufs are the bright yellow, viscous liquid obtained from eggs when separated from the egg white. The yolk is a rich source of nutrients including protein, iron, vitamins, and healthy fats that make it a versatile ingredient in cooking and baking. Used as a natural emulsifier, the yolks can thicken sauces, add richness to custards, and provide structure to baked goods. They can also be used to make mayonnaise or aioli, giving them their characteristic yellow hue. In addition to their culinary uses, egg yolks have been used in traditional medicine for their high nutritional value.
