So, what is ou de maïs?
"Oeuf de maïs" is a French term that translates to "corn egg" in English, but it actually refers to corn starch. This ingredient is derived from the endosperm of corn kernels, which are first cleaned, soaked, and then ground into a fine powder. Corn starch is widely used in cooking and baking as a thickener, binder, and stabilizer. It is a gluten-free alternative to wheat flour and is commonly found in recipes for sauces, soups, custards, and baked goods.
