So, what is xérès?

Xérès is a fortified wine hailing from the southern region of Spain known as Jerez. It's produced using the Palomino, Pedro Ximénez, or Moscatel grapes and has a distinct nutty flavor with a hint of oak that's derived from the sherry barrels it's aged in. Xérès is often used as an ingredient in cooking, adding a rich depth of flavor to dishes such as sauces, stews, and marinades. Its versatility makes it a popular choice in both savory and sweet recipes, from drizzling over ice cream to creating a caramelized glaze for roasted meats.
