Alpha-amylase is a type of enzyme commonly used in the food industry as a natural additive. This enzyme is produced by several organisms including bacteria, fungi, and plants. It helps in breaking down complex carbohydrates such as starch into simpler sugars such as glucose and maltose. This process is known as hydrolysis and is vital in the production of several food products such as bread, beer, and pasta. Alpha-amylase is also used as a processing aid in the production of high fructose corn syrup, a commonly used sweetener in the food industry.
