So, what is alun?
Alun, also known as alum, is a versatile food ingredient that has been used in cooking for centuries. It is a white crystalline powder that is tasteless and odorless, making it ideal for a wide range of culinary applications. Alun is primarily used as a food preservative, as it has antimicrobial properties that help prevent the growth of bacteria, yeasts, and molds. Additionally, alun can be used as a firming agent in pickling and canning, as well as a clarifying agent in the production of beer and wine. While alun is generally recognized as safe for human consumption in small amounts, excessive consumption can lead to gastrointestinal issues.
