So, what is amidon blé?
Amidon blé is a French term for wheat starch, a versatile ingredient commonly used in baking and cooking. Extracted from the endosperm of wheat kernels, it is a fine white powder with neutral flavor and odor. It is often used as a thickener, stabilizer, and binding agent in various food products, including sauces, soups, puddings, and bakery items. Wheat starch has high amylopectin content, which gives it excellent water-binding properties and makes it useful for improving texture and mouthfeel. It is also gluten-free, making it a popular alternative to other starches for those with gluten intolerance.
