Ammoniumkarbonater, also known as ammonium bicarbonate, is a white, crystalline powder with a strong ammonia odor. It is commonly used in baking as a leavening agent to help baked goods rise. When ammoniumkarbonater is heated, it decomposes into carbon dioxide, water, and ammonia gas, causing the dough or batter to expand and create a light, fluffy texture. This ingredient is also used in the production of cookies, crackers, and other baked goods to give them a crisp texture. While it is safe for consumption, ammoniumkarbonater can be an irritant to the skin, eyes, and respiratory system and should be handled with care.
