So, what is annato?
Annatto is a natural food coloring and spice derived from the seeds of the Achiote tree, which is native to tropical regions of Central and South America. The vibrant red-orange hue of annatto is due to its high concentration of carotenoids, which are powerful antioxidants known for their health benefits. In addition to its use as a coloring agent, annatto has a slightly sweet and peppery flavor that is popular in Latin American and Caribbean cuisine. It is often used to season rice, meats, and stews, as well as in the production of cheeses, butter, and margarine. Annatto is also used in traditional medicine for its anti-inflammatory and antimicrobial properties.
