So, what is anthocyanin?
Anthocyanins are water-soluble pigments found in many fruits, vegetables, and flowers that give them their vibrant colors, ranging from deep reds and purples to bright blues and greens. These plant-based compounds have been studied extensively for their potential health benefits, including antioxidant and anti-inflammatory effects, as well as potential anti-cancer and anti-diabetic properties. They are also known for their stability in different pH conditions, making them useful natural colorants in the food industry. Some common sources of anthocyanins include berries, grapes, red cabbage, eggplant, and red wine.
