It is a salt derived from benzoic acid and potassium hydroxide and is often used in acidic foods, such as carbonated drinks, fruit juices, pickles, and sauces. Potassium benzoate is a white, odorless powder with a slightly bitter taste and is considered safe for human consumption in small amounts. However, excessive intake may cause adverse effects, such as allergic reactions, respiratory problems, and skin irritation.
