So, what is bicarbonatado de amonio?
Bicarbonatado de amonio, also known as ammonium bicarbonate, is a commonly used food ingredient that is classified as a leavening agent. It is a white crystalline powder with a slightly salty taste and a strong odor of ammonia. Bicarbonatado de amonio is used in baked goods such as cookies, crackers, and biscuits to help them rise and become light and fluffy. Unlike other leavening agents, it does not leave a bitter taste in the finished product. Bicarbonatado de amonio is also used in some traditional recipes, such as German Lebkuchen, to give them a distinct flavor and texture. Despite its name, it does not contain any baking soda, but rather, it decomposes into carbon dioxide, water, and ammonia when heated, making it an effective leavening agent.
