So, what is bicarbonato de amônio?
Bicarbonato de amônio, also known as ammonium bicarbonate, is a white crystalline powder that is commonly used as a leavening agent in baking. It has a slightly bitter taste and produces carbon dioxide gas when heated, causing the dough to rise. Unlike other leavening agents, such as baking powder and soda, bicarbonato de amônio doesn't leave a metallic aftertaste, making it ideal for delicate pastries like Danish and puff pastry. In addition to its use in baking, it's also utilized as a fertilizer, a fire extinguisher, and a smelling salt. However, it's worth noting that it can break down into ammonia gas during baking, so it should be used in a well-ventilated area.
