So, what is bicarbonates d'ammonium?
Bicarbonates d'ammonium, also known as ammonium bicarbonate or baking ammonia, is a white crystalline powder commonly used in baking. This ingredient works as a leavening agent, helping baked goods to rise by releasing carbon dioxide gas when exposed to heat. It has a distinct ammonia smell which evaporates during the baking process. Bicarbonates d'ammonium is often used in traditional European and Scandinavian recipes for cookies, crackers, and lefse.
