So, what is bittermandel?
Bittermandel, also known as bitter almond, is a type of almond that has a strong, bitter flavor and aroma. Unlike sweet almonds, bittermandels contain a small amount of a toxic substance called amygdalin, which is why they are not typically used for cooking or snacking. Instead, bittermandel oil and extract are used to add a distinctive, intense almond flavor to a variety of dishes, including baked goods, marzipan, and cocktails. Bittermandel is also used in some traditional medicine practices, but it should be used with caution due to its toxic properties.
