So, what is bittermandeln?
Bittermandeln, also known as bitter almonds, are a type of almond that are known for their distinctively bitter taste. While they may look similar to sweet almonds, bittermandeln contain amygdalin, a compound that breaks down into hydrogen cyanide when ingested. Due to this potential toxicity, bittermandeln are typically used in small quantities for their flavor in dishes such as marzipan, amaretto liqueur, and some baked goods. Bittermandeln are also used in traditional medicine for their supposed health benefits, although their use is controversial and should be approached with caution.
