So, what is boniato?
Boniato, also known as the Cuban sweet potato or batata, is a starchy root vegetable with a delicate, slightly sweet flavor and a creamy texture. This tuberous vegetable is popular in Latin American and Caribbean cuisine, where it is used in a variety of dishes such as soups, stews, and desserts. Boniato is an excellent source of dietary fiber, vitamins B6 and C, and potassium. Its skin can range from white to purple, while its flesh is usually pale yellow or beige.
