Carbonati d'ammonio, also known as ammonium carbonate, is a white, crystalline powder commonly used as a leavening agent in baking. It produces carbon dioxide gas when heated, causing dough or batter to rise and creating a light, airy texture in baked goods. Unlike baking powder or baking soda, which lose their effectiveness over time, carbonati d'ammonio has a long shelf life and can be stored for years. It is also used in the production of ammonia cookies, a crisp and crumbly biscuit with a distinctive, faintly ammoniacal taste. Due to its strong odor, it should be handled with care and used in well-ventilated areas.
