Sodium caseinate is made by adding sodium hydroxide to acid casein, a protein found in milk, which causes the casein to separate and form a curd. The curd is then washed with water to remove impurities, dried, and ground into a fine powder. Sodium caseinate is a versatile ingredient that can improve the texture, consistency, and nutritional value of food products.
