Cocoa mass processed with alkali, also known as Dutch-processed cocoa, is cocoa powder that has been treated with an alkalizing agent to reduce its natural acidity. This process produces a powder that is darker in color, smoother in texture, and has a milder, less bitter taste compared to natural cocoa powder. The alkali treatment also enhances the powder's ability to dissolve in liquids, making it ideal for use in baking and chocolate-making. However, because of the alkali treatment, Dutch-processed cocoa may have lower antioxidant properties than natural cocoa powder.
