So, what is alkalized cocoa?
Alkalized cocoa, also known as Dutch-processed cocoa, is a type of cocoa powder that has undergone an alkalization process to neutralize its natural acidity. This process involves treating the cocoa beans with an alkaline solution, which not only reduces the bitterness but also deepens the color and smooths out the texture of the resulting cocoa powder. Alkalized cocoa is commonly used in baking and confectionery to add a rich chocolatey flavor and color to cakes, cookies, and chocolates. It is also popular in beverages such as hot cocoa and chocolate milk.
