So, what is cotechino?
Cotechino is a traditional Italian sausage that is made from finely ground pork meat and fat, flavored with spices such as cloves, cinnamon, and nutmeg, and encased in a natural casing. This coarsely textured, savory sausage is typically served during the winter months as a part of festive meals, such as the Italian New Year's Eve feast, where it is often paired with lentils for good luck. Cotechino is precooked, which means that it only needs to be heated up before serving. Its rich flavor and tender texture make it a delicious addition to soups, stews, pasta dishes, and sandwiches.
