Cross-linked sodium carboxymethylcellulose (CMC) is a versatile food ingredient that functions as a thickener, stabilizer, and emulsifier. It is created by treating the natural cellulose found in wood pulp or cotton with sodium hydroxide, followed by carboxymethylation and cross-linking. This process creates a highly water-soluble compound that can withstand high temperatures, acidity, and salinity. As a result, cross-linked sodium CMC is commonly used in processed foods, such as sauces, dressings, baked goods, and dairy products, to improve texture, prevent separation, and increase shelf life. It is also used in pharmaceuticals, personal care products, and industrial applications.
