So, what is d fumée liquide?
Liquid smoke, or "fumée liquide" in French, is a flavoring ingredient that is commonly used in the food industry. It is made by condensing smoke from burning wood or other organic materials and then collecting the liquid that results. This liquid contains many of the compounds that give smoked food its distinctive flavor, such as guaiacol and syringol. Liquid smoke can be used to add a smoky flavor to a variety of dishes, from meats and fish to vegetables and even cocktails. It is especially useful for adding a smoky taste to foods that can't be traditionally smoked, such as cheese or tofu.
