So, what is de la citronnelle?
De la citronnelle, also known as lemongrass, is a fragrant and flavorful ingredient commonly used in Southeast Asian cuisine. It is a tall, perennial grass with a citrusy aroma and a subtle, lemony flavor that adds depth and complexity to dishes. The woody lower portion of the stalk is often bruised or crushed before being added to soups, curries, marinades, and teas, releasing its essential oils and intensifying its flavor. De la citronnelle is also valued for its medicinal properties, as it is believed to aid in digestion, relieve headaches, and reduce fever.
