Polydextrose is a versatile, low-calorie, soluble fiber that is commonly used as a food ingredient to add texture, increase fiber content, and reduce sugar and fat levels in food products. It is made by combining glucose, sorbitol, and citric acid, which undergoes a polymerization process resulting in a white, odorless powder. Polydextrose is used in a variety of foods, including baked goods, cereals, beverages, and dairy products. It has a neutral taste and can also be used as a bulking agent to enhance the volume and mouthfeel of food products without adding calories. Additionally, polydextrose has been shown to have prebiotic effects, promoting the growth of beneficial bacteria in the gut, which may provide health benefits such as improved digestion and immunity.
