Amidon tapioca modifié, also known as modified tapioca starch, is a common food ingredient used as a thickener, stabilizer, and emulsifier. It is derived from the cassava root, which is native to South America and is widely cultivated throughout tropical regions. Modified tapioca starch is made by treating tapioca starch with chemical or physical processes, which alter its molecular structure and properties. This modification increases the starch's stability, viscosity, and resistance to heat, acid, and shear, making it ideal for use in a wide range of food products, including soups, sauces, baked goods, and snacks.
