So, what is des soja?
Dés soja, also known as soy nuggets or soy chunks, are a versatile and nutritious ingredient made from defatted soy flour. These small, light-brown pieces are dry and porous with a texture similar to meat, making them an excellent substitute for animal protein in vegetarian and vegan dishes. Dés soja are rich in protein, low in fat, and contain essential amino acids that are necessary for a healthy diet. They can be soaked in water or vegetable broth, then seasoned and cooked in a variety of ways, from stir-fries to stews, adding both flavor and nutrition to any dish.
