Dinatrium guanylate (also known as disodium guanylate) is a flavor enhancer that is commonly used in processed foods to intensify the umami taste. It is a white crystalline powder that is derived from the nucleotide guanine, which is found in yeast, fish, and meat. Dinatrium guanylate is often combined with monosodium glutamate (MSG) to create a synergistic effect, enhancing the flavor of foods such as soups, snacks, sauces, and ready-made meals. It is considered safe for consumption by regulatory authorities, but may cause adverse reactions in people who are sensitive to MSG.
