So, what is e333?
E333 is the European food additive code for calcium citrates, which are the calcium salts of citric acid. It is commercially produced by neutralizing citric acid with a mineral base such as calcium hydroxide or calcium carbonate. The citric acid used in the process is derived from the microbial fermentation of carbohydrate substrates, like corn starch or molasses, using the mold Aspergillus niger. The calcium compounds are obtained from mined mineral sources such as limestone.
Food manufacturers use E333 as an acidity regulator, firming agent, sequestrant, and calcium fortifier. It regularly appears on ingredient lists for items such as fruit jams, processed vegetables, baked goods, soft drinks, nutritional supplements, and calcium-fortified plant milks.
E333 is classified as vegan because its production relies entirely on mineral, plant, and microbial inputs. No animal tissues, animal-derived ingredients, or animal processing aids are used at any stage during its commercial synthesis.
