E431 is the E-number for polyoxyethylene (40) stearate, a synthetic additive used primarily as an emulsifier and stabilizing agent. It is manufactured by reacting ethylene oxide with stearic acid. Food producers commonly add it to commercial baked goods, bread doughs, cake mixes, and processed desserts to improve crumb texture, blend fats with water, and extend shelf life.

The additive is considered possibly vegan because the stearic acid required for its production can come from either plant or animal sources.
