Ecrevisse, also known as the European crayfish, is a freshwater crustacean with a rich, sweet taste that is highly sought after in French cuisine. The reddish-brown crustacean, with its signature claws, is often found in rivers, streams, and lakes throughout Europe. Ecrevisse is a popular ingredient in classic dishes such as étouffée, bisque, and paella, and can be served boiled, fried, or grilled.
