So, what is émulsifiant-lécithine?
Emulsifiant-lécithine, also known as lecithin, is a natural emulsifier derived from soybeans, eggs, or sunflower seeds. It is commonly used in the food industry to improve the texture, consistency, and stability of various products, including chocolate, baked goods, and sauces. Lecithin helps to blend water and oil-based ingredients together, preventing separation and creating a smooth, homogeneous mixture. In addition to its emulsifying properties, lecithin is also a source of choline, an essential nutrient that supports brain and liver function. Its mild, neutral flavor makes it a versatile ingredient in many recipes.
