"Et carbonate acides de sodium," also known as sodium acid carbonate, is a white crystalline powder commonly used as a leavening agent in baking. It is a combination of sodium bicarbonate and an acid, such as cream of tartar or citric acid. When mixed with a liquid and heated, it produces carbon dioxide gas, which causes the dough or batter to rise. Sodium acid carbonate is commonly found in baking powder, self-rising flour, and some cake and cookie mixes. It is also used in the production of effervescent tablets and as a pH adjuster in various food products.
