So, what is fd&c yellow 5 lake?

FD&C Yellow 5 Lake is a synthetic, water-insoluble pigment derived from the food colorant tartrazine. It is manufactured by precipitating the water-soluble FD&C Yellow 5 dye onto an insoluble mineral substrate, which is typically aluminum hydroxide. The dye itself is synthesized through chemical reactions using petrochemical derivatives. Because lake pigments do not dissolve in water and disperse evenly in fats and oils, manufacturers use them in dry drink mixes, bakery coatings, confections, frostings, chewing gum, and pharmaceutical tablets.

This ingredient is vegan because it is produced exclusively from synthetic and mineral origins. The precursor chemicals come from petroleum sources, and the substrate is derived from mined or synthesized aluminum minerals. At no point in the synthesis of tartrazine or the formation of the aluminum lake are animal tissues, animal byproducts, or animal-derived processing aids used. Therefore, FD&C Yellow 5 Lake is suitable for a vegan diet.
