So, what is fresh yeast?
Fresh yeast is a living, single-celled organism that belongs to the fungus family. Also known as baker's yeast or cake yeast, it is a popular leavening agent used in baking bread, pastries, and other baked goods. Unlike dry yeast, which is dormant and requires rehydration before use, fresh yeast is moist and ready to use straight out of the package. It works by consuming the sugars in the dough and releasing carbon dioxide gas, causing the dough to rise. Fresh yeast has a distinct aroma and a tangy, slightly sour taste, making it a key ingredient in many traditional bread recipes.
