So, what is glucono-delta-lacton?
Glucono-delta-lactone, commonly known as GDL, is a white, odorless, water-soluble powder used as a food additive and acidity regulator. It is derived from gluconic acid, which is naturally found in fruits, honey, and wine. GDL is commonly used in baked goods, dairy products, and meat products to improve texture and shelf life. It is also used in tofu production as a coagulant. GDL is considered a safe and effective food ingredient and is approved for use by various regulatory agencies worldwide. Its mild acidity and slow release of acidity make it a versatile ingredient in the food industry.
We've built a vegan ingredients scanner that classifies food ingredients as "vegan", "non-vegan", or "potentially vegan".
It allows you to avoid non-vegan ingredients - just take a picture of a product's ingredient list, and the app tells you if the product is vegan or not.
