So, what is head cheese?
Head cheese, also known as brawn or souse, is a delicacy made from the meaty parts of a pig's head that are cooked, seasoned, and then molded into a loaf. Despite its name, it doesn't contain any cheese. The meat is usually simmered with herbs and spices until tender, and then the liquid is strained and the meat is chopped and combined with the broth to form a gelatinous mixture that sets into a solid loaf when chilled. The resulting product has a savory, slightly salty flavor and a soft, creamy texture that is perfect for spreading on bread or crackers.
