So, what is invertasa?
Invertasa is a natural enzyme that is commonly used in the food industry to break down sucrose (table sugar) into its component sugars, glucose and fructose. This process is known as inversion, which makes the sugar easier to digest and increases its sweetness. Invertasa is produced by yeast and certain bacteria and can be found in many plants and fruits, such as honey and agave nectar. It is a key ingredient in the production of confectionery products such as fondant and fudge, as well as in the brewing and wine-making industries. Invertasa is also used in the production of some pharmaceuticals and as a research tool in biochemistry.
