"Jarabe de azucar parcialmente invertido" is a syrup made by combining water, sucrose and an acidic substance to create a solution that is then heated. The heating process causes the sucrose molecules to break down into glucose and fructose, resulting in a syrup that is sweeter and more viscous than regular sugar syrup. The partially inverted nature of the syrup makes it less prone to crystallization and therefore ideal for use in confectionery and baking applications such as candy making, ice creams, and cakes.
