So, what is acúcar invertido?
Acúcar invertido is a syrupy liquid sweetener that is commonly used in baked goods, confectionery, and beverages. It is made by breaking down sucrose into its two constituent sugars, glucose and fructose, through a process called hydrolysis. This results in a product that is sweeter and more soluble than regular sugar, and also has a higher moisture retention capacity, making it ideal for use in moist cakes, breads, and candies. Acúcar invertido is also known for its ability to prevent sugar crystallization and extend the shelf life of baked goods.
