So, what is juoksete?
Juoksete is a traditional Finnish food ingredient used in cheese-making. Also known as rennet, it is a natural enzyme derived from the stomach lining of young ruminants, such as calves or lambs. When added to milk, it coagulates the casein proteins, causing the milk to curdle and form solid cheese curds. Juoksete is typically sold in liquid form and can be used in both industrial and artisanal cheese production. It imparts a distinct, slightly tangy flavor to cheese and plays a crucial role in the development of the texture and aroma of the final product.
