So, what is kälberlab?
Kälberlab, also known as calf rennet, is a traditional ingredient used in the production of cheese. It is extracted from the fourth stomach of young calves and contains enzymes that coagulate milk, allowing the separation of curds and whey. This natural coagulant is highly valued by artisanal cheesemakers for its ability to produce a firm and flavorful cheese. Kälberlab is often preferred over synthetic coagulants due to its subtle and complex flavor profile, which adds depth and complexity to the cheese. Its use is particularly common in European cheeses such as Parmigiano-Reggiano, Roquefort, and Gouda.
