Квасец, also known as sourdough starter or levain, is a natural fermenting agent commonly used in traditional bread-making. It is made from a mixture of flour and water that is left to ferment over several days, during which wild yeasts and bacteria grow and multiply. The resulting mixture becomes a living culture that imparts a distinct tangy flavor and aroma to bread dough. Unlike commercial yeast, квасец is a slow-acting leavener that requires more time to raise dough, but it also yields bread with a complex flavor profile and a chewy texture. Using квасец in bread-making is an ancient practice that has been passed down through generations and is still cherished by artisan bakers worldwide.
