So, what is lait cru?
Lait cru is a French term used to describe unpasteurized, raw milk. Unlike pasteurized milk, which has been heated to eliminate harmful bacteria, lait cru retains its natural enzymes and beneficial bacteria. This gives it a distinct, creamy texture and rich flavor that is highly sought after by cheese makers and food aficionados alike. However, due to the potential health risks associated with consuming raw milk, its sale is often regulated or prohibited in some countries. Despite this, lait cru remains a popular ingredient in traditional French dishes like fondue, raclette, and certain cheeses such as Roquefort and Camembert.
