Le carbonate d'ammonium, also known as ammonium carbonate, is a food ingredient that is commonly used in baking. With its unique ability to release gas when heated, this white powder acts as a leavening agent in a variety of pastries and baked goods. In addition to its functional properties, it also adds a distinct flavor and aroma to the finished product. Despite being chemically derived, it is generally considered safe for consumption in small amounts. However, due to its high levels of ammonia, it should be handled with care and kept out of reach of children.
