It is commercially produced by reacting inorganic magnesium compounds, such as mined magnesium carbonate or magnesium oxide, with citric acid. The citric acid used in this reaction is typically generated through the microbial fermentation of plant-derived carbohydrates, such as corn or sugar beet molasses, using the fungus Aspergillus niger.
In food and beverage manufacturing, magnesium citrate functions as an acidity regulator, nutrient fortifier, and firming agent. It is frequently listed on labels for dietary supplements, flavored beverages, plant-based milk alternatives, and packaged baked goods.
