"Matière grasse végétale totalement hydrogénée" is a food ingredient made from vegetable oils that have undergone a chemical process called hydrogenation. This process involves adding hydrogen to the oil to increase its stability and make it solid at room temperature, similar to saturated fats found in animal products. Totalement hydrogénée means that the oil has been fully hydrogenated, resulting in a product with a long shelf life and high melting point. It is commonly used in baked goods, margarine, and as a substitute for dairy fat in vegan products.
