It is a white, crystalline powder that dissolves easily in water and is often used in the production of wine, beer, and other fermented foods. Sodium metabisulfite can also be used as a bleaching agent for food products, such as dried fruits, and as an antioxidant to prevent discoloration and spoilage. While generally considered safe, sodium metabisulfite can cause allergic reactions in some people, particularly those with asthma.
